Apple Walnut crumble muffins


The perfect warm, cozy muffins for autumn time, flavored with cinnamon and nutmeg. this simple recipe is sure to put you and your family in the coziest mood for autumn.


Walnut Apple muffins

Serves 12 / 1.5 hours total

INGREDIENTS

Dry ingredients

  • 1 and 1/2 cup of all purpose flour

  • 1 teaspoon of baking soda

  • 1 teaspoon of baking powder

  • pinch of salt

  • 1 teaspoon of cinnamon

  • 1 teaspoon of nutmeg

Wet ingredients

  • 2 large eggs

  • 1/2 cup of butter

  • 1/4 cup of brown sugar

  • 1/2 cup of white granulated sugar

  • 1/4 cup of whole milk

  • 1/4 cup of yogurt (optional)

Crumble ingredients

  • 1/2 cup flour

  • 1/4 cup crushed roasted walnuts

  • 2 table spoons of cold butter

  • 2 table spoons of brown sugar

Apple preparation

  • 4-5 medium sized apples (Peeled)

  • 1/4 cup lemon juice

  • 1/4 cup brown sugar


STEP ONE : Prepare your apples

After peeling and slicing your autumn apples into small cubes, place them into a pot on medium heat with 1/4 cup lemon juice and 1/4 cup brown sugar. let your apples soften, not to much but just enough for them to become a little softer and sweeter. feel free to add some extra cinnamon and nutmeg into your apple stewing process.


STEP TWO: Prepare your crumble

Simply combined the butter, flour, brown sugar and crushed walnuts into a cold metal bowl. use your fingers to create a sandy like texture. your mixture may seem to dry, but continue to work that butter into the ingredients and trust the process.

Place aside in the fridge





STEP THREE: Dry ingredients

combine all the dry ingredients into a large bowl, insure the ingredients are well combined so you don't end up with random pockets of baking soda. place aside on the counter





STEP FOUR : Wet ingredients

in a large bowl, whisk together your eggs, brown sugar and granulated sugar until it has many air bubbles. then slowly incorporate the milk, butter and/ or yogurt until fully combined.




FINAL STEP : GET BAKIN!

In the largest bowl, combine your wet and dry ingredients together, Don't forget to add your stewed apples! (try to avoid the extra liquid from the apples, but save it in the fridge for another project we have coming soon!)

Slowly fold together the wet and dry ingredients



Fill up your best muffin tray with our delicious batter, simple sprinkle on about a tablespoon of the crumble. place in the oven for 14-15 minuets until golden brown. once your muffins are fully baked, remove them from the tray and allow them to cool before eating.


TIP: Make a double batch and freeze the rest in a air tight container!
